I've learned from cooking for my friends and family for several decades that there's only one true way to find out if you've made good food. If they ask you to make it again, you've succeeded. If your dog suddenly gets an upset stomach, you know the food was dropped under the table. I rarely use a recipe, other than for baking, or a cookbook. I admit I can never remember turkey roasting times, and I do make a great turkey. Tomato sauce is made from memory, as it should be, over a gas stove, for at least two days. And a barbecue grill uses charcoal, not gas, to work correctly.
