Kaiser Rolls

The Kaiser roll is the only acceptable substitute for rye bread when it comes to a deli sammich and in many cases, it's the better choice. This is a simple recipe for the bread machine.
- 2 cups warm water (approx. 110 F.)
- 3 teaspoons dry yeast
- 4 tablespoons of granulated sugar
- 1/3 cup vegetable oil
- 6 cups bread flour
- 1 egg white and 2 teaspoons of cold water for an egg wash
- (optional) Poppy seeds
In the bread machine, place 1/2 a cup of water and 1 tablespoon of sugar. Stir in the yeast. Let mixture stand for a 5 minutes to dissolve yeast. Then add the rest of the sugar, the vegetable oil and 5 cups of the flour.
Process on 'dough' cycle.
Dust in the remaining cup of flour as dough forms into a ball and seems wet enough to receive remaining flour. If necessary, add a few drops of warm water. When the kneading cycle is done, transfer the ball of dough to a large greased bowl, flipping the dough one time to grease the top. Let it rise, covered, for one hour. The dough will more than double in size. Remove the dough from the bowl and punch it down. Cut it into 16 equal pieces and form each one into a ball. Place the balls on baking sheets lined with parchment paper and let the balls rise for 30 minutes.
Preheat oven to 400 F. Brush the balls with the egg white / water mixture and then snip the tops crosswise with a pair of scissors.
Place the trays in the oven and bake for 15 to 20 minutes until the tops start to brown.
