Lemon Blueberry Loaf

Bake this as a breakfast bread - it's dense enough for the toaster - or serve it as a dessert. Make sure your blueberries are frozen solid otherwise they will fall apart and make mush in the blender.
Ingredients
- 1/3 cup unsalted butter
- 1 cup sugar
- all of the zest of 2 lemons
- all of the juice from the 2 lemons
- 2 eggs
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup milk
- 1 cup frozen blueberries
Process
- Cream the butter, lemon zest, and sugar and then add the eggs and lemon juice.
- Combine flour and baking powder then stir into egg mixture.
- Add milk.
- Fold in the blueberries
- Pour batter into greased meatloaf pan and bake at 350 degrees for 60 minutes.
